Cream butter, add sugar and beat until fluffy. Add egg yolk, vanilla, lemon juice and
orange rind and mix well. Add flour, salt and work together to form soft dough. Chill.
Shape dough into small balls and dip in slightly beaten egg white. Roll in chopped nuts
and place on greased cookie sheet two inches apart. Press a candied cherry on top of
each one. Bake in moderate (350° F.) oven for 15 to 18 minutes until golden brown.
Makes two dozen.
