        How does one preserve meats to last in hot climbates like in Baghdad?  Jerking beef & pork. 
              Jenni studies the methods used in olden times to preserve meats.  Bilabub, the reference
                  in Tom Stobarts book is a very lovely bit of writing.

3.  A discussion, dialogue, about our new George Washington Turkey Spice & just why we are
         adding some " whole Tellicherry Special Mangalore " peppercorns into the spice bottle
            in addition to the ground spices?

4.  The use of language in a mathematically clear manner as called for in the " ISO 9002 " standards:
               " Hand Selected " bay leaves as compated to " Hand Picked " bay leaves.

5.  Chris is going to New York City on Friday and will be taking a rare Schwenkfelder saffron flower
          bulb to Edgar Tafel, or perhaps to his aide Lorna.  We are asking him to do an architectural
            design for the small saffron flower green house to be built on the south side of our white house.

6.  A spice customer lady, Amy, gets to talking with Jenni about " organic things " and Jenni attempts to
          explain very old Indian ideas about heating & slightly roasting spices to develop their health attributes.
              Amy asks " You mean along Ayurvedic lines?  "  Yes.  But perhaps we might look this interesting
                  subject up in some of the more classic spice references in Ayurvedic India medicene books???

7.  A little more about Amy talking with Jenni.  We're asking all the young ladies to get to know each of
        twelve spice books that we want to study to the point where she might give a critique on each book
           and especially give an idea of where each is more or less unique.  Look for the Elizabeth David Spice Book.

8.  Tom Atwater comes in late in the day and asks about our various grades of turmeric.  We end up with
         young Katie reading the excellent two pages about turneric from the book " Mistresses of Spices " and
     then even the three of us rub a little into the skin on our hands.  Butterfly Wings Dust.  Yes, turmeric should
       have that feel and that fineness.  But ours from the jar, while good Madras, was only about a 40 mesh grind & a bit rough,
           whereas it really should be about a 80 or 90 mesh grind.  Work on this with Jenni and Philip and Katie.

10.  George Lang's Book reference to " Ginger Souffles ".  Page 115:  " Mme Du Berry, the famous mistress
         of Louis XV, relied instead on ginger souffles.  LANG'S COMPENDIUM.

11.  Dione Lucas well known restuarnat in New York City was named " Gi,nger something or other "  Check the
reference in the magazine The Speciality Food Shop Magazine.  Also look in her books for a recipe for:
                       " Giner Souffle and send to Edgar Tafel in New York City.
