Place egg whites, sugar and water in top of double boiler. Beat well and place over boiling
water. Beat constantly with rotary beater until mixture will stand in peaks, about seven minutes.
Remove from fire and beat until thick enough to spread. Add vanilla. Add nuts if desired.
